We harvest the new growth on the Sitka Spruce trees each year in late May for this unique jelly. My children like to snack on them, which is fine with me because they are a great source of vitamin C. It is popular with the locals to welcome spring with Sprucetip tea. We like our tea sweet and had the idea one day to turn our sweet tea into a jelly, and Sprucetip jelly was born.
