Alaska Fireweed Honey
We pick Fireweed blossoms by hand and then steep them in a raw clover honey sourced from the Pacific Northwest to create the delicate flavor of this Alaskan favorite. I am often asked why it is called fireweed. I don't know for sure, but I will say that when we are out harvesting and we have a bucket full of the beautiful purple pink blossoms, there are always a few bees milling about, and if you stick your hand down in the bucket, the blossoms are actually warm! I think the bees moving about generate heat, and thus in our family we say that is how fireweed must have gotten its name!
